➡️Ingredients:
-2 Tbsp olive oil or coconut oil
-1.5 tsps cumin seeds
-1 Tbsp minced garlic
-1 Tbsp minced ginger
-1 Tbsp garam masala
-1.5 tsps ground coriander
-1 tsp turmeric
-1 tsp salt
-.25 tsp cayenne pepper
-1 can diced tomatoes (28 oz.)
-3 cups of cooked chickpeas
-2 cups dry basmati rice
*Optional add ins: tempeh, tofu, or green peas for more plant-based protein
➡️Instructions:
-Cook rice according to directions (start this process prior to cooking chana masala)
-Heat oil over medium-high heat
-Add cumin seeds, garlic, and ginger
-Cook 1 minute
-Stir in garam masala, coriander, turmeric, salt, and cayenne pepper
-Cook 1 minute
-Add tomatoes and chickpeas
-Reduce heat to medium and cook for 10-15 minutes
➡️Serve chana masala over cooked rice.
➡️Add a splash of lemon juice when serving.
